Shrimp • Spinach • Red onion • Taleggio cheese

Last autumn, we visited Calabria. Calabria is famous a for its red onions and chilis. I immediately fell in love with a side combining these two ingredients with semisoft cheese. In this dish, the red onions are accompanied by spinach and shrimps.

Red onions with Taleggio cheese: Chop red onions and mix them with salt, pepper, chili, thyme, bay leaf, prosecco and water. Steam for 2 hours. Bake for another 30 minutes in 180°C, until almost no brew remains. Form into small heaps and spread grated Taleggio cheese on top. Broil for another 5 minutes.

Spinach: Sauté fresh spinach in olive oil. Season with fleur de sel.

Shrimps: Drizzle the shrimps with olive oil and season with salt, chili and chopped garlic.

Serve with fresh thyme and edible flowers (like clover and carnation).
