Like this raw food Spanish classic. For optimal taste, use organic, sun-ripened veggies. And for optimal refreshing effect, serve the soup chilled.
Blend a peeled cucumber, two bell peppers, 15 cherry tomatoes, two spring onions (only the white part), one garlic clove, the juice of half a lime, herbal salt and black pepper until smooth.
Brunoise (i.e. finely chop) deseeded cucumber and bell pepper. Mix with finely chopped parsley, mint and chives. Place a spoonful of the chopped veggies into a soup bowl, decorate with borage and carefully encircle with the soup. ¡Buen apetito!
