Some time ago, our lovely neighbor served us caffè al piatacchio. I immediately fell in love with this sensational Sicilian treat. It’s a marriage made in heaven of creamy pistachio butter and bitter espresso. How lucky I was when I by coincidence found a jar of pistachio butter in our pantry.
For optimal visual effect, serve this coffee drink in a glass cup. Place a spoonful of pistachio butter (crema al pistacchio) in the bottom of the cup. Prepare a shot of espresso directly onto the pistachio butter in the cup. Alternatively, if you’re using a stovetop espresso maker, carefully pour the espresso into the cup to preserve the crema. Stir before enjoying. Salute!
