Pepparnötter (Peppernuts)

My past week has been so incredibly busy. Privately and professionally. I have barely had any time for blogging. Am I the only one thinking: “Why does Christmas have to be so stressful?”. As of today, there will be no more stress. We are leaving Switzerland to spend the holidays in Finland’s winter wonderland. Time for contemplation. Time with our loved ones. And finally, time for blogging. About a lazy food blogger’s ultimate Christmas treat: Spicy, chewy, crunchy gingerbreads.

Stir 250 g butter and 200 g sugar until white and fluffy. In the meantime, simmer 100 g molasses, 2 tsp ground bitter orange, 3 tsp cinnamon, 1.5 tsp ginger and 1.5 tsp cloves. Allow to cool somewhat and then add to the fluffy butter. Add 1 egg and stir in a mixture of 350 g wheat flour and 1.5 tsp baking soda. Cool in the fridge for at least half a day. From into mirabelle sized balls, gently press an almond into the centre, cool the cookies for 5-10 minutes and then bake for 6-8 minutes at 200°C.
