Today, we’ve celebrated my baby girl’s fifth birthday. She’s an amazing kid. Always up for a laugh. Childishly witty. Full of great ideas. Extremely cuddlesome. A bundle of joy, really. A perfect girl deserves a perfect cake for her birthday. And what suits that occasion better than a cake chosen the best chocolate cake in Switzerland?
Melt 300 g dark chocolate and 100 g butter. Whisk 5 egg whites and a pinch of salt until stiff. Add 50 g sugar. Beat 5 egg yolks and 50 g sugar until fluffy. Mix the chocolate with the egg yolks and carefully fold in the egg white. Transfer to a mold and bake for 25 minutes at 180°C.
Allow to cool and serve as is or – as I did – dust with powdered sugar, decorate with fresh raspberries, primula petals and mint leaves and serve with honey flavored whipped heavy cream.
