Do you remember my blog post referring to our wedding dinner based on regional produce? Last week, I came across some beautiful smoked sturgeon from the same farm delivering fish for our wedding reception – Tropenhaus Frutigen. Sturgeon is a fairly fatty fish that screams for a tart side dish. A crunchy carrot slaw balanced this dish nicely.
For the slaw, finley grate carrot and apple. Mix with finely chopped scallion, chili and parsley. Season with white aceto balsamico. No salt is needed, as the fish is quite salty.
Assemble by placing a piece of smoked sturgeon on some slaw. Decorated with parsley, scallion and chili.
