Last autumn, I wrote about the exceptional quince harvest and our lovely neighbors being kind enough to share their produce with us. The starter and dessert we prepared, we were able to enjoy right away. Another creation needed a bit longer to infuse: our quince liqueur. In the meantime, it’s quite drinkable.
Peel, seed and coarsely dice enough quince to fill a steril jar holding one liter. Bring 100 g sugar and 250 ml water to a boil. Simmer until the sugar is completely dissolved. Pour the sugar syrup over the fruit and fill the jar with vodka. Seal the jar and let the flavors mingle in a warm and dark place for one to three months. Shake the jar once in a while. Filter the liqueur into a clean bottle and enjoy chilled. Gsundheit!
