Strawberry marbled elderflower juice soup 🌱

My second dish for this month’s food blog challenge by Foodblogs Schweiz features strawberries and elderflower. Since I created two dishes also containing these very ingredients last month (a sweet and a savory one), I wanted to come up with something unexpected, yet familiar. Let me present: a strawberry marbled elderflower juice soup reminiscent of a sun-kissed summer day.

For the soup, you will need to start with the elderflower juice. Once it’s done, bring 500 ml diluted juice into the boil and add 2 tbsp cornstarch solved in some juice. Simmer until thickish and then allow to cool.

Mash and strain strawberries through a fine sieve. Marble the soup with the strawberry coulis. Decorate with fresh strawberries, strawberry leaves and blossom as well as elderflowers.
