Today, I was playing around in the kitchen. Experimenting with shapes and textures. I ended up with a trio of spheres, all in red but all cooked using different techniques. What do you think about the outcome?
Score a shallow cross in the skin on the bottom of the cherry tomatoes. Cover the tomatoes with boiling water and leave for a minute or two until the skin around the cross starts to curl. Place the tomatoes into cold water and then peel off the skin. Taste with fleur de sel and black pepper.
Carve watermelon spheres by inserting a baller into the flesh and rotating it. Sear in some olive oil.
Carve strawberry spheres by using the technique described above. Marinate in olive oil, white aceto balsamico, chopped basil, fleur de sel and black pepper.
Serve the spheres on a slice of grilled halloumi and decorate with geranium blossom as well as basil blossom and leaves.
