One of my favorite vegan starters has to be faux ceviche. It’s light and zingy and fruity and tangy. All at the same time. This dish really makes your taste buds pop. And best of all, it’s foolproof.
Ceviche: Peel, stone and quarter 4-5 lychees per serving. If fresh lychees aren’t available, you can substitute them for canned ones. Cover with lime juice and season with fleur de sel and finely chopped fresh chili to your liking.
Assembly: Place the ceviche into a circle. I used a serving ring. Decorate with fresh cilantro, small spheres of watermelon and strawberries as well as cilantro blossom.
