We have the best neighbors in the whole world. They share not only their grapes, apples and plums with us, but also their quinces. I absolutely L O V E quince. The taste. The consistency. The many possibilities. Today, I’m presenting a sweet treat. Next time, I’ll share something savory.
Soup: Clean the quinces, place them into an oven dish and allow them to soften in the steamer for a couple of hours. The fruit will release juices that will turn into a sticky, flavorful soup. If the flavor and consistency aren’t to your liking, add sweetener of your choice and mount with starch.
Assembly: Serve the soup with small spheres of steamed quinces. Decorate with lemon balm leaves, violet petals and chrysanthemum blossom.
